How come the cake is only one layer? My eldest granddaughter askes me to make her a Vermont Spice Cake for her birthday and that is a 4-layer cake AND she does not throw it in the garbage!!!!
You wouldn't want more than one layer of this cake. I've since heard that carrot cake is better with baby food carrots rather than real, chopped up carrots.
I bet it was your mother that told you that about the carrot cake as I got the receipe from her and it is great!!! In fact my missionary friend in Japan says it is his favorite and I plan on making it for him when I am there in August.
