Best Way to Chop Egg for Egg Salad

Eggs-actly the Right Way to Make Egg Salad

I learned this eggs-citing tip years ago from Jim's mom. Want to make egg salad without a huge mess? Here's what you do.
Peel your hard boiled egg.
Put the egg on a small plate.


Using a dinner fork, hack the egg in half. Smush one half the the egg using the tines of the fork. Don't get too wild here or you'll end up with egg bits on the floor......



Smush the second half.
Smush the two smushed halves together.



Add all the other ingredients. Right there on the plate! Really! Slap the mess between 2 pieces of bread and there ya go.

If you really hate washing dishes, use a paper plate for the above “technique.” As a matter of fact, a cheap paper plate with the fluted edges will help corral the egg bits and after you scrape the smush off the plate, just chuck it.

That's it. That's really it. This isn't rocket science. But until I learned this method, I used to try cutting the egg up with a knife.....or a pastry blender. Can you imagine trying to get all the egg off a pastry blender? Royal mess. This changed my life.

A Couple More Egg Tips:

I like watching America's Test Kitchen on PBS. I have actually picked up some good recipes from the show. I love the product testing segments and even the “Equipment Corner” where they investigate kitchen gadgets and products. But it was a viewer who sent in this tip: Need to crack an egg? Instead of hitting the edge of a pan or bowl, tap the raw egg gently on the counter top.” Sounds a little wacky, doesn't it? But it works! Give it a try!

Hard boiling eggs is really simple. Put the eggs in a small sauce pan, cover with cold water and put over high heat. As soon as the water comes to a rolling boil, TURN THE BURNER OFF. Let the pan just sit there. Turn your timer on to 20 minutes. As soon as the timer dings, drain the water off the eggs and they are ready to peel. I usually run some cold water over the eggs as I peel them and the shell comes off slick as can be. Plus the cold water keeps me from burning my fingers!

So there you go. If you have actually read this far, you, too, can become an eggs-pert like me.

Sure would like to know how you get those shells off that hard boiled egg so easily I always have a mess and usually wind up angry and squish the stupid egg up in my hand and chuck it!! I do it the same way you do but apparently I'm still doing something wrong.

Mom, you taught me to put ice cubes and salt in the water while the eggs cool. The shells come off a good bit easier that way.
